Ingredients

14 eggs (Large – if  X-large – you can use 12)

3 oz sliced salami (not too thin) – “reduced sodium” salami from Trader Joe’s is great!

Cracked pepper (to taste – about 1 teaspoon)

Adobo Seasoning (to taste – about 1 teaspoon)

14 small tortillas (I usually do both corn and flour)

1  tubs Cream cheese (I prefer whipped – it spreads more easily)

Hot Sauce – we prefer Sriracha, but chipotle tabasco is also good… whatever you like best!

Directions

1) Chop the salami into 1/2” pieces

2) Mix the eggs (for scrambled) and add cracked pepper

3) Saute’ the salami in a large fry pan (a chicken fryer works great). Cook until mostly browned pieces – stir constantly to cook thoroughly and evenly)

4) Add eggs to salami, continue to stir. Add adobo. Cook until finished – not too dry.

5) Warm tortillas in fry pan and store on a plate in a warm oven or put in a tortilla holder.

To assemble:

Take a tortilla, spread with cream cheese (approximately 1T). Add a portion of salami egg mixture – about 1/4 cup. Add hot sauce to taste. Fold and eat.

Serve with mimosas, coffee, fruit & muffins or Breakfast cake.

Serves 4 people.
Proportions:

2 large eggs per person (plus one extra for every twelve eggs)About 3/4oz of salami per person – more or less to taste. About 2-3 tortillas per personAbout 2 oz of cream cheese person

10 oz sliced salami (not too thin) – “reduced sodium” salami from Trader Joes is great!

Adobo Seasoning (to taste – about 1-2 teaspoons)

36 small tortillas (we usually do both corn and flour)

2  tubs Cream cheese (I prefer whipped – it spreads more easily)

Hot Sauce – we prefer Sriracha, but chipotle tabasco is also good… whatever you like best!

Tina’s Breakfast Cake

Ingredients

1 yellow cake mix

unsweetened applesauce (to replace oil in cake mix)

1 large granny smith apple

1 1/2 cups oats1/2 c flour

1/2 cup firmly packed brown sugar

1/2 cup room temp butter

1 tablespoon cinnamon

Directions

1) Preheat oven to 350 degrees. Lightly oil 9×13 baking pan – glass makes a nice presentation

2) Chop apple into small pieces (about 1/4”)

3) Mix 1/2 c oats, brown sugar, butter, flour and cinnamon together with fork, pastry cutter or fingers until well mixed and crumbly.

4) Prepare cake mix according to directions, substituting apple sauce for oil. Add 1 cup oats, mix.

5) Pour 1/2 cake batter into baking pan. Spread to cover.

6) Spread 1/2 chopped apples and 1/2 streusel evenly over cake batter.

7) Gently pour/spread remaining batter over top of cake mixture. Top with remaining apples and streusel.

8) Bake 35-40 minutes on center rack in oven until light golden brown and cake will lightly spring back when touched.

9) Cool in pan – cut into 12-15 pieces.
Eat warm or cold. Store covered.
